Why did I never eat an animal meatball recipe?
By Erin McGovern – Posted May 04, 2019 02:59:47We were on the hunt for vegetarian, vegan and gluten-free recipes for a family-friendly dinner, so we took to Pinterest to search for recipes for vegan and vegetarian meatballs.
We ended up with over 10,000 results, including over 200 recipes from our own family.
But one of the most popular recipes was one from the vegan cookbook, The Vegan Cookbook by Dr. Debra Nelson.
After trying it out, we were not disappointed.
Dr. Nelson’s recipes for meatballs are easy to make, contain no animal ingredients and are packed with nutrients like calcium, iron, and vitamin B12.
We added the recipe to our Vegan Pancakes recipe box for dinner on a whim and thought it was a perfect match for our family.
We used the same meatballs as our family and loved the flavor and texture.
The meatballs, when cooked, were delicious, crispy and creamy.
We even got a few leftover to use up.
The only thing we would change is to reduce the salt to 1/4 teaspoon or less.
It took a little experimenting, but we really liked the results and would definitely make this a regular staple in our family’s kitchen.
We shared our recipe with our family, friends and colleagues and everyone loved the results.
The next time we are in a pinch, we know we can make something vegan-friendly for our kids.
