How do you prepare an Australian vegetarian baked bean?
Posted October 05, 2018 11:02:29It’s been a while since we’ve had a veggie baked bean and there’s a good chance we’ve never had one at all.
But there’s nothing stopping you from trying out a new recipe for a veg bean, and you’ll be rewarded with a savoury, tender, and delicious bean that’s the perfect complement to your breakfast.
I’ve made this vegan bean recipe for some years now and I’m always delighted when someone tells me they’ve never tried one before.
But this is my favourite way to make it, and it’s a really easy one to make too!
Vegan Bean Baked Beans Ingredients: 2 cups of fresh, washed beans, soaked overnight (you can soak overnight if you like), drained, rinsed and drained (I prefer to rinse the beans first)1 tablespoon of olive oil1 tablespoon cumin seeds1 tablespoon salt1 tablespoon black pepper1 cup of flour1 cup chopped tomatoes1/2 cup chopped onions1 cup sliced cucumber1 cup white wine1 teaspoon black pepper (I like the milder version)1 cup soy milk (I use soy milk from a package of soy beans, but you can use almond or almond milk as well)2 tablespoons soy sauce (you could substitute soy sauce with tapioca starch or regular soy milk)1 large carrot, diced1 cup fresh kale, diced3-4 cloves garlic, diced (about 1-inch long)2 cups chopped fresh cilantro (about 3-4 medium)1 teaspoon dried oregano1 teaspoon chili powder (optional)1/4 teaspoon black peppercorns1 teaspoon sea salt (or more if you’re using a food processor)Directions: 1.
Preheat oven to 425°F.2.
Add beans to a large pot and cover with water.
Let soak overnight, drain, and rinse.3.
In a large bowl, combine the olive oil, cumin, salt, pepper, cayenne, cilantro, onion, kale, garlic, tomato, cheddar cheese, soy milk, soy sauce, water and spices.
Add the bean mixture and stir to combine.4.
Pour into a baking dish and bake for 15-20 minutes, until beans are tender.5.
Serve hot with a dollop of avocado or your favourite vegan dip.
